Sure Copenhagen is where NOMA was and that whole ‘new Nordic’ movement which you know if important - even if you’re not sure how or why. But this is a city that has layers and depth to it’s food creativity beyond just the headliners. From bakeries to spirit distillers, and fermentation labs to some of the best tacos outside of Mexico, Copenhagen’s inspiration vibes are very high.
